L’Hospitalet de Gazin 2004, Pomerol
90% Merlot, 7% Cabernet Sauvignon and 3% Cabernet Franc with average age of the vine being over forty years old. At Chateau Gazin, the winemaking team hand-picks fruit at the exact degree of ripeness. The wine is aged in casks (60% new) for eighteen months, during which it gains in clarity and finesse, being racked every three months and fined with egg whites. From pruning to bottling takes nearly three years to produce the end product.
